Spaghetti Carbonara

Simple. Easy. Delicious.



Ingredients (4 people):

5 egg yolks
60 g Parmesan cheese, plus some more to serve, grated
200 g piece of ham, diced
300 g spaghetti
2 cloves of garlic, peeled and crushed with hand
Olive oil
Black pepper
Salt

1. Put the egg yolks into a bowl, add the Parmesan and season with pepper. Mix well using a fork and set aside.

2. Cook the spaghetti in a large pan of boiling salted water until al dente. Meanwhile, heat up a tablespoon of olive oil in a medium frying pan. Place the frying pan over a medium-high heat. Add the garlic cloves and leave it to flavour the fat for a minute. Stir in the ham and cook for 4 minutes, or until it starts to crisp up.

3. Pick out and discard the garlic from the pan, then, reserving some of the cooking water, drain and add the spaghetti. Toss well over the heat so it really soaks up all the flavours. Remove the pan from the heat. Add a splash of the cooking water and toss well and season with pepper. Pour in the egg mixture – the pan will help to cook the egg gently, rather than scrambling it. Toss well, adding more cooking water until it’s lovely and glossy. Serve with grated Parmesan and an extra twist of pepper.


Note: It’s traditional to use spaghetti in this recipe, but other kinds of pasta may as well be used. Jamie Oliver suggests bucatini or rigatoni. We suggest tagliatelle as well. The original recipe used pancetta instead of ham.




Esparguete Carbonara

Simples. Fácil. Deliciosa.



Ingredientes (4 pessoas):

5 gemas de ovo
60 g queijo Parmesão ralado
200 g pedaço de fiambre, em cubos
300 g esparguete
2 dentes de alho, descascados e esmagados com a mão
Azeite
Pimenta preta
Sal

1. Coloque as gemas numa taça, adicione o parmesão e tempere com pimenta preta. Mexa bem com um garfo.

2. Cozinhe o esparguete al-dente numa panela com água e sal. Ao mesmo tempo, aqueça uma colher de azeite numa frigideira média. Coloque a frigideira ao lume médio-alto. Adicione os alhos e cozinhe durante 1 minuto para adicionar sabor. Adicione a pancetta e cozinhe por 4 minutos ou até começar a ficar crocante. 

3. Retire e deite fora o alho e escorra o esparguete, guardando alguma água da cozedura. Adicione o esparguete à frigideira e mexa bem para que absorba os sabores. Retire a frigideira do lume. Adicione alguma da água da cozedura do esparguete, mexa e tempere com pimenta. Adicione a mistura com as gemas - o calor da frigideira vai cozinha-los lentamente em vez de os deixar tipo ovos mexidos. Misture bem e adicione mais água da cozedura até que fique brilhante e macio. Sirva com mais parmesão ralado e pimenta preta. 


Nota: Esparguete é tradicionalmente usado nesta receita, mas outros tipos de massa também podem ser usados. Jamie Oliver sugere bucatini ou rigatoni. Nós sugerimos ainda tagliatelle. Na receita original é usado pancetta em vez de fiambre.
